Bite Size Quiche

I've been busy getting together some quick and easy bite-size breakfast foods.
How can you go wrong with a bite or two of quiche
These particular bites, besides the obvious eggs and cream, have tomato, thin sliced deli turkey and cheese.
Get out your cupcake tin and let's get going....
Use any leftovers or cheese flavor you like.
I had some thinly sliced deli turkey, about 6 slices roughly chopped, 2 1/2 roma tomatoes, and 2 1/2 cups cheddar-colby jack cheese, 1 1/2 cups of cream and 8 large eggs, 2 teaspoons dry mustard and salt and pepper to taste.
Seed and roughly chop the tomatoes,
put in just enough tomato to barely cover the bottom of the cup
then layer in the turkey and the cheese
In a mixing bowl, combine the cream, eggs, dry mustard and salt and pepper.
Pour the cream and egg mixture into the cups, filling to the top.
I placed the cupcake tin on a baking sheet just in case of any spill over. I had very little spill over.
Bake at 375*F about 15-20 minutes until the center is set.
Hot out of the oven and ready to be eaten. Mmmmmm
