Cucumber Pineapple Salsa

   Sweet, spicy, refreshing. One of many wonderful summer salsas. 

_KCB_2877A great snack with crackers or chips, but tonight, I'm having some alongside a nice thick grilled pork chop. 

Have a cucumber hanging around? let's get to chopping...

Besides cucumber and pineapple,


you'll need some cilantro, red onion, garlic and jalapeño pepper.


Coarsely chop the pineapple and add to the bowl. I like to seed the cucumber before I dice it. 


Squeeze the lime


Chop the cilantro, pepper, garlic and the red onion. 

Add all ingredients to a medium-size bowl and mix well.


Add salt and pepper

Cucumber-Pineapple Salsa

1 cup pineapple (fresh or sugar-free canned), minced
1/2 english cucumber, minced (about 1 cup)
1/4 sweet or red onion, finely minced
juice of 1/2 lime
1 tablespoon finely minced cilantro
1 clove garlic, minced
1/4 teaspoon salt
1/2 minced jalapeño (optional)

Mix everything in a medium bowl and allow flavors to meld about 10 minutes
before eating
