Gather your ingredients.
Beef shank, ground coriander, ground cumin, smoky powdered chipotle, onion, and green chilis. The garlic missed the photo shoot.
Add oil to a medium saucepan set over medium high heat. Dice an onion and the green peppers.
Add the onion, green chilis, salt and freshly ground black pepper to the saucepan.
Once the onion and chilis start to soften, add garlic, ground coriander, cumin and chipotle.
Cook a few more minutes while stirring to toast the spices a little and get them mixed in well with the onion and chilis.
Add beef stock to the onion chili mixture and bring to the boil.
I don't always have beef stock on hand so I used my favorite substitute.
Dice the meat and add to the pot. Reduce the heat, cover and simmer until the meat is tender.
I added the bone with the diced meat, I think the addition of bones adds to the flavor. Besides, there's a cook's treat inside that bone.
For one pound of meat, I used 3/4 of a medium onion; 2 cloves of garlic, 2 green chilis, 1 jalapeno, 1tsp of ground coriander, 1tsp of ground cumin and 1tsp of powdered chipotle and two cups of beef stock. One good thing about chili is it's so easy to create your own version according to your taste. This turned out pretty spicy, just how I like it.
