Homemade Rockin' Granola


This granola rocks. I swear, nothing beats homemade granola and it's so easy to make. 



Golden little oat flakes, surrounded by succulent fruits and toasty nuts, reposing in a pool of cream.


Now, let's make some 


I grabbed bags and boxes of ingredients, some I had used in my other granola experiments; and I added some new and different ones that I thought would work well also. 

That's how I ended up with this Rockin' Granola recipe



In a large bowl add the oats and the nuts. 




In a small saucepan add coconut oil, agave, vanilla and brown sugar. 




Bring the mixture to a simmer and stir until the brown sugar is dissolved. Then add to the oat nut mixture. 




Mix, mix, mix,  the oat mixture and the wet ingredients. Pour the oat mixture onto a baking sheet lined with foil. Lining the baking sheet with foil makes clean up a snap, and, it's so much easier to get the oat mixture back into the bowl after baking. 




Halfway through the baking process, stir the oat mixture and check for "done-ness" If you like your granola crunchy, it might take up to 15 minutes or more. I like mine chewy, so after the 5 minute mark I stirred and kept checking it ever few minutes, stirring and texture checking. Mine baked for only 10 minutes. 

When your granola is to your likeness, remove from oven and place the pan on a rack to cool. 




Return the cooled oat mixture to the large bowl, then stir in the coconut and fruits. 

Yummm ready to eat.

Here's the recipe I came up with. I hope you try it and like it as much as I do.

Rockin' Granola


4 cups quick oats
2 cups sweetened shredded coconut
2 cups sliced almonds,or your favorite mix; small pieces
1 cup chopped pecans; small pieces
1/2 cup coconut oil; or vegetable oil
1/2 cup blue agave
3 tablespoons brown sugar
1 teaspoon Salt
1 teaspoon vanilla
1 1/2 cup diced dried apricots; small dice
1 cup diced dried dates; small dice
1 cup craisins

Preheat oven to 350*F
In a large bowl, toss oats and nuts together.
In a small saucepan melt the coconut oil; add the agave, vanilla
and brown sugar. Simmer the oil mixture, stirring until the
brown sugar is dissolved.

Pour over the oat, nut mixture and mix well. Pour the oat mixture
onto a baking sheet (I use a 17.5X11.5 lined with aluminum foil)
Bake, stirring occasionally until light brown**
Remove and cool, then add the coconut and fruits.

**I like my granola a little on the chewy side. I baked it for
5 minutes then stirred and returned to the oven. After that,
I checked it every two minutes for the texture that I want.
For chewy it took 10 minutes.
For crunchier granola return to oven and bake to golden brown
about 5 to 10 minutes more.
