Finally, pork that tastes like pork.
I discovered the sweet juicy Kurobuta pork at Homegrown Meats. I'm telling you, after eating this, it will be very hard to go back to eating the bland, tasteless, cardboard they sell as pork in the grocery stores.
Get out your grill pan or outdoor grill, you'll love this.
I picked up some Peruvian Chile Lime Seasoning the last time Squeaks and I went to the spice shop.
Lightly dust the chops with your favorite seasoning. Just salt and pepper is wonderful also.
Throw on the grill and cook turning them over half way through.
Before turning them over I give them a quarter turn to get some nice grill marks.
I mashed some potatoes with butter.
I was going to serve the potatoes alongside the chops with a dollop of butter, but, I remembered seeing on a cooking show, I think it was Iron Chef, where they took a tablespoon of the mash and using two spoons rolled the mash between the two making little "pillows"
Hope I can explain it. With the mash in one spoon, place the second spoon behind and under the mash and scoop and roll the mash from the first spoon into the second spoon. Repeat several times until you have a nice little pillow of mash.
Place on a baking sheet, sprinkle with salt and pepper and bake at 400* until golden brown.
They are so wonderful. You get a nice puffy potato with a golden brown crispy outer layer.
What's not to like about this!!!
