Chicken Soup, the cure all?

What do you want when you are sick and tired? why chicken soup of course.
My foodie friend Serene said she'd bring me some if she didn't live so far away, and I know she would too, but...I had to make my own.
I had a quart of homemade chicken broth thawing in the fridge. Come see what I gathered up to add to it.
I found some carrots, I used about 11 baby carrots, one cup of leftover rice and half of a roasted chicken breast and half a leek and diced them up.
I also have some preserved lemons. I thought I'd dice some up to add a little "brightness" to the soup.
Added some olive oil to a 2quart pot and started caramelizing the carrots and leeks.
Added a little salt and pepper.
Once the carrots and leeks were caramelized I added a clove of diced garlic and finely diced preserved lemon peel, about 1/4 of a lemon's worth.
And delicious chicken broth.
While the soup was simmering,
I buttered both sides of a piece of sourdough bread and slathered it with smashed garlic, then cut into cubes. Put the cubes on a baking sheet and put under the broiler and tossed once in a while until they were golden brown.
It didn't cure what ails me, but it sure was tasty.
For today's lunch, I will add a little ginger to the broth and have another delicious bowl of soup.
