Veggie Belly's Grandmother’s Multicolored Mixed Vegetable Raita Recipe

I snagged the recipe for this beautiful, refreshing and easy raita from Veggie belly's blog and what a beautiful blog it is.

Drained canned corn, peeled and diced seedless cucumbers, thinly sliced green onion, quartered cherry tomatoes and yogurt. Pretend you see the diced carrots also. 

Her recipe also calls for bell peppers and pomegranate seeds that I don't have, so I made it with what I did have and it is just wonderful anyway.

So quick and easy, just put the diced veggies in a bowl,

add the yogurt,

mix it all up. It tastes better if you let it sit overnight.
