Three Pepper Sauté
July 05, 2010
Three different colored peppers sautéd in olive oil with some garlic, capers and finished off with black olives.
Gather the bell peppers of your choice. I usually use green, red and yellow. A friend shared some little sweet peppers with me so I used those. You'll also need olive oil, minced garlic, capers <pretend they are there> and some black olives cut in half.
Trim off the ends the peppers and,
cut in half. Clean out any seeds and cut into strips.
In a medium skillet, add enough olive oil to lightly coat the bottom of the skillet. You can always add more oil as needed. Add the sliced peppers to the hot oil.
After a few minutes toss the peppers around in the oil.
Add the minced garlic and a pinch of salt.
When the peppers are fork tender, add the capers and black olives.
Cook and toss and toss cook the pepper a few minutes until the olives are heated.
I'm having this for dinner tonight, alongside some whole wheat pasta in an olive oil garlic sauce.
And that's that
