Bean soup and corn bread
November 07, 2008
The other night I made soup from a package of Manischewitz four bean soup mix. It was pretty good but I did have to add some beans to it. Just a little too much liquid to bean ratio for me.
I also think the flavoring packet was a bit strong and salty. I ended up draining about half of the liquid and added back in a little water and chicken broth, then it was fine. My advice would be to add the flavoring packet a little at a time.
Right before the soup was finished I made a pan of cornbread using the recipe on the box of Albers corn meal.
Let's get cookin'
First mix the dry ingredients together.
Inside a medium mixing bowl add a cup of flour and a cup of corn meal
Add 1/4 cup of granulated sugar. I think in some parts of the south this is considered heresy.
One tablespoon of baking powder,
and a teaspoon of salt.
To one cup of milk mix in 1/2 cup of vegetable oil and a large egg lightly beaten.
Add this mixture to the dry ingredients and stir just until combined.
Pour into a greased 8-inch square pan.
Don't get distracted like I did while baking the cornbread. It's was good and didn't dry out too much.
Bean soup with cornbread plated.
I didn't add any green chilis or flavoring to the corn bread. I make herbed butters so I can change the flavor of my corn bread any time with the butters.
I had some good lunches this past week.
