I was gifted some ham for Christmas. It's a little saltier than I'd like so I thought using it in a scalloped potato dish would be great, then I spied the sweet potatoes on the counter...Yes!!! sweet potato gratin.
Add a little tarragon, onion, gruyere and heavy cream. Yummylicious
Let's get cooking
Along with the ham you'll need heavy cream, onion, garlic, butter, sweet potatoes, orange zest, tarragon, nutmeg, and pepper.

In a small sauce pan heat the heavy cream with some
tarragon
and smashed garlic.
I forgot about the zest but my intention was to add it to the cream.
While the cream is heating up,
slice the sweet potatoes and onion.
Love my Kitchenaid slicer attachment, the potatoes just fly out of the chute.
In a buttered casserole dish, place a layer of potatoes topped with some diced ham and sliced onion.
Sprinkle on some cheese.
I used Gruyere. Use what ever cheese you prefer but I think it made the dish.
Now pour some cream over the layers.
I removed the smashed garlic clove before pouring on the cream.
Add another layer of potatoes, ham, onion and cheese.
Here's where I added a lot of freshly ground black pepper
and dollops of butter
and more heavy cream.
End with a top layer of potatoes.
Put into a 375*F oven for 45 minutes or until hot, bubbly and the potatoes are cooked through.
Top with more cheese and place under the broiler
until the cheese is melted and browned.
I'm very happy with how this turned out. The richness of the cheese and the sweet potatoes work very well together. I didn't add any salt as the ham was salty to begin with.

Sweet Potato Gratin
cheese/eggs
2 cups heavy cream
1 tsp. dried tarragon
1 clove garlic; peeled and smashed
1/2 teaspoon freshly ground nutmeg
butter
2 pounds sweet potato; peeled sliced
2 cups diced ham
1 small onion; thinly sliced
1 1/2 cups grated Greuyere cheese
freshly ground black pepper
Preheat the oven to 375 degrees F.
In a saucepan, heat up the cream with the tarragon, garlic and nutmeg.
While cream is heating up, butter a casserole dish. Place a layer of sweet potato topped with some diced ham, sliced onion and cheese.
Remove cream from heat, remove the smashed garlic clove, then pour a little over the potatoes.
Make 1 more layer ending with the sweet potatoes on top.
Bake, uncovered, for 45 minutes.
Sprinkle some more Greuyere and broil until cheese browns, about 5 minutes.
