Beautiful fresh, creamy, mayonnaise
I love making flavored mayo's, especially chipotle mayo, and homemade tartar sauce.
All you need is one whole egg, the juice of half a lemon, and zest if you'd like, a tablespoon of Dijon style mustard, a pinch of salt and a cup of vegetable oil, I use grapeseed oil.
Yippieee I get to use my new immersion blender. Oh what a joy it is and sooo quiet.
Making mayonnaise with an immersion blender is easy peasy, just dump all the ingredient into the blender jar that came with it, or any jar the blender will fit into, yes, including the oil.
Place the immersion blender in the bottom of the jar, turn it on and slowly move it up to the top of the jar a couple of times to fully incorporate the oil.
Over all it takes about half a minute to mix.
In a food processor or regular bender: Put everything in EXCEPT the oil. Start it on high wait a couple seconds and then very slowly drizzle in the oil.
And that's that.








I love homemade mayo; I want to find a source of pasteurized eggs, though, so I won't feel so nervous about the raw-egg aspect. Lovely photos!
