OMG!!! is this ever flavorful. Mushrooms, onion, garlic and green chilis spice up crushed tomatoes. What a great way to poach eggs.

Want to make some?
Get some crushed tomatoes. I like either Pomi brand or San Marzano. Green chili, onion, garlic and fresh basil.
I used half of a small onion finely chopped, 2 cloves of garlic minced and a 1inch chunk of frozen green chilis chopped.
I have some Hatch green chilis that I roasted, peeled, and froze in a plastic freezer bag. All I have to do when I need some green chili is take a sharp knife and cut off the amount I need. Handy as heck.
Sauté the onion in a little oil or butter. Notice you have some mushrooms in the fridge and slice up one of them and add to the onions.
Add the minced garlic and green chilis.
Cook a few more minutes until the garlic starts to take on some color.
Since I was cooking only two eggs I used about half of the 26.46 oz box of crushed tomatoes.
Over medium low heat, simmer the tomatoes for a few minutes.
Once the tomatoes are warm, move the sauce a little so you will have a nice little home for the eggs.
Crack each egg into a small bowl before adding to the sauce. I wouldn't want to have to fish out any broken shell pieces from the sauce. {{shudder}}
Cover with a lid, lower the heat and simmer until the eggs are poached to your liking.
Plate with potatoes or rice and sprinkle with some fresh basil,
and your favorite cheese.
I used Queso Enchilado. Feta or goat cheese would be great also. What ever you like is the best cheese to use.
Oh yummmm this is how I like my eggs.

I got inspiration from this and made very similar with left over quick curry sauce I'd made using crushed tomatoes, onion, madras paste and then added the green pepper to this. It was delicious served with brown rice. Will make more variants of it in the future, delicious, exciting, quick, healthy and easy meal for a bachelor like me.
