The first day of the new year typically calls for some black eyed peas and greens.
Today I tried a quick and easy way of cooking the greens.
I didn't make my usual "Mess O' Greens" but they turned out delicious anyway.
First step to wonderful peas and greens on New Years Day is to pop open a bit of the bubbly.
I opened a bottle of Prosecco.
I didn't have a chance to open it New Years Eve, so sipping some today made me just as happy and I believe the black eyed peas actually turned out better ;-)
I simmered a pound of black eyed peas with a couple of smoked ham hocks, one minced clove of garlic and half of a diced onion until the peas were tender.
Here's my quick cheat for the greens.
Instead of making a separate batch of pot liquor, I just used some of the juices from the cooked black eyed peas.
In a separate sauce pan put about 2 cups of the liquor for two bunches of collard greens.
After the greens were cleaned in cold water, I tore them into bite size pieces and added them to the juice from the black eyed peas and simmered until tender.
I'd say sparkling wine, black eyed peas and greens are a match made in heaven.

I check your blog everytime I see it one RFC...it is the Best photography and narrative I have seen. I don't even like Greens and Black-eyed peas but yours looked mighty GOOD!!
