Shrimp, calamari and scallops swimming in a buttery garlic sauce. I used Trader Joe's seafood blend, it sure is a convenient blend to have on hand. I also cooked up some opo squash in butter with some onion and a little garlic.
Opo squash is new to me, I don't remember seeing it before so I thought I'd give it a try.
I peeled the squash.
Only because it had been bounced around in the fridge for a few days and it was starting to look it.
Right about here is where you are going to start the water boiling for pasta. I have become a convert to heavily salting the water I cook my pasta in. I've tasted the difference and the pasta cooked in salted water is soooo much better.
The inside reminds me of a yellow crookneck squash and has a slight cucumber taste.
It's very mild and I think it would be a great accompaniment to spicy and richly flavored foods.
Give the squash a rough dice and
cook it up with some butter, onion and a little garlic.
When the squash is close to being finished,
start the seafood blend in butter and some garlic.
I kept a close eye on the calamari rings, and pulled them out as they were getting done. Calamari requires only a few minutes over high heat, if you let it cook any longer it gets rubbery then you have to cook it for at least 30 minutes to an hour to get it tender.
When the shrimp and scallops are done, remove from the heat add the calamari back in to keep them warm.
When the pasta is done, pour that delicious loveliness over your cooked pasta of choice and enjoy.
All I used was butter and garlic but a little white wine and/or red pepper flakes would be a great addition also.

I just found your blog on mmm-yoso and wanted to say hi! I love all three of those seafoods - it looks really yummy! Sadly my boyfriend doesn't like seafood so I don't get to make it much. But the plus side is, if we ever go out to get dinner, I get to keep all the seafood stuff to myself! Yum!

I know what you mean, my husband doesn't like seafood either, he's pretty much on his own when I make seafood for dinner. So far he's survived just fine. ;-)
Like you, I tend to order seafood when we go out for dinner.
