Parmesan cheese, preserved lemon and thyme.
A wonderful little bite to have with a glass of your favorite red wine.
Cut the Parmesan cheese into chunks and chop it up in a food processor. Give the preserved lemon a fine dice.
If you prefer a wafer with a smoother texture for the fancy cocktail hour, grate the cheese rather than chopping it.
Add the thyme.
Next time I make these I'm going to try adding tarragon instead of thyme. I think it would taste great.
Now add the preserved lemon.
Put heaping tablespoons of the cheese mixture on a parchment paper lined baking sheet.
Place in a 400*F oven for 4 to 5 minutes.
Cool the wafers before removing to paper towels.
Delightful little morsels of cheesy, lemony goodness.

2 tablespoons finely chopped preserved lemon
about 1/2 small preserved lemon
1 cup grated Parmesan cheese
1 tablespoon dried thyme
1. Preheat the oven to 400°F.
2. Rinse the preserved lemons very well. Dry on paper towels, and pat dry.
3. Mix together the lemon pieces, the Parmesan, and the thyme . On a
parchment-lined baking sheet, place heaping tablespoons of the cheese
mixture, leaving room for them to spread as they melt, bake in the oven for
4 or 5 minutes, until golden. Allow to cool completely on the parchment
paper, then lift off with a spatula to paper towels.
Yield: 9 wafers
