living, breathing, butcher. Yes, a cut the meat himself, nothing plastic pre-wrapped butcher.
That's my prime rib roast sitting up there on the scale.
He started working with his dad, who was a custom butcher, when he was ten years old and has been been a butcher ever since.
Let's look at the meat cases.
And he carries Harris Ranch Beef Yippiee!!!!!!!!!
For a small butcher shop he as a pretty good selection of meats.
And if you don't get there early enough you won't get any Carne or Pollo Asada.
While we were there we bought another pound of his homemade breakfast sausage, we've learned to get while the gettin's good. That sells out fast too.

Ran a place like that myself back at the turn of the century.
Couldn't compete with Wally Wirld on price, but a lot of folks appreciated the quality.

I don't like Wally Weird and definitely not for meat. I probably go in there a few times a year and only if I have to.
