I was drinking buttermilk thinking it would help my poor sick tummy. Then I saw Paula Dean making a buttermilk pie on t.v. and thought dang, pie would really make me feel better ;-) and I had all the ingredients.
Gathered the ingredients and started mixing.
I added the biscuit mix, buttermilk and melted butter to the sugar.
Mixed it up until it was just blended, don't over mix.
Poured it into a buttered 9 inch pie plate. Then I poured it back into the mixing bowl because I forgot to add the eggs and vanilla. grrrrrrrrr
Add eggs and vanilla and mix...again. Put into a pie plate that had to be washed and buttered...again.
Bake until toothpick comes out clean.
Admire your handiwork and dive in. It is very, very, sweet and creamy.
Hmmm I think I'll have a piece for breakfast with my coffee. Must have worked, my tummy feels much better today.

Olivia's Buttermilk Pie
pies
1 1/2 cups sugar
1 cup buttermilk
1/2 cup biscuit mix; recommend bisquick
1/3 cup butter melted; 5-1/3 T
1 teaspoon pure vanilla extract
3 eggs
Preheat oven to 350 degrees F. Grease a 9-inch pie pan.
Put all ingredients in a bowl and blend for 1 minute with a handheld
electric mixer. Pour mixture into prepared pan. Bake for about 50 minutes
or until a toothpick inserted in the center comes out clean. Cool for 5
minutes.
