Last Wednesday was the Thanksgiving pot luck at work. I woke up with a horrible scratchy throat that hurt up into my ears. Dang I hate missing out on good food. A co worker was kind enough to stop by and pick up my contribution to the meal. I prepared it the night before, all that was left to do was plug in the crockpot.
The day before I assembled all the ingredients.

Sauté the onion in butter until translucent but not browned. I added the minced garlic about half way through.
Add the cream cheese to the onion. I added it in chunks and stir, stir, stirred,
until it was a homogeneous mixture. I was going to enter into a discussion about the pronunciation of homogeneous but thought better of it. ;-)
Add the sour cream to the homogeneous (no matter how you pronounce it) mixture. Blend thoroughly.
Add the spices. I used about half as much more as the recipe called for and could have used a little more.
In the crockpot put the whole kernel corn,
and green chilis. I used 3 of the 4oz cans.
Pour in the butter, onion, cream mixture.
Ready to plug in.
I made this the night before, all the way through mixing the cream mixture with the corn. The next day I put the crock into the crockpot and plugged it in.
This makes a lot. It almost filled my 6 qt crockpot.

Corn With Green Chilies (Crockpot)
1/2 stick unsalted butter
1 each small onion; minced
1 each clove garlic; finely minced
8 ounces cream cheese
1 cup sour cream
64 ounces whole kernel corn, frozen; thawed and drained
2 cans creamed corn; 16 oz. each
2 cans green chilies; 4 oz. each
1/2 teaspoon salt
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Have all ingredients at room temperature.
sauté minced onion in butter until transparent but not browned. Add minced
garlic and continue cooking until garlic is fragrant.
Add cream cheese to butter mixture, allowing it to melt and blend thorough
together. Remove from heat and add sour cream. Blend thoroughly. Add
salt, coriander, cumin, and cayenne, and blend thoroughly. Set aside.
In large mixing bowl, combine whole kernal corn, creamed corn, and green
chilies. Toss together until thoroughly mixed.
Pour the butter/cream cheese/sour cream mixture over the corn mixture and
mix gently with a rubber spatula.
Turn mixture into 4-quart crockpot. Cook on low until mixture is gently
